I am starting a list of the easiest games to get points on, how you do it, and how long it takes(on average).
As of right now, I believe the EASIEST game to get the full 1k gamerpoints on is AVATER: THE LAST AIRBENDER - THE BURNING EARTH

Over at Mike Card's house and we just knocked out 1k gamerpoints in the Avatar game. 1 minutes 58.25 seconds from the load screen on the game. Pretty much awesome.

I feel pretty bad about stealing these points, but I am a JUNKIE and I will take whatever I can get.

And by the way, anyone who wants the easiet 1k points you will EVER get, just let me know. I am renting the game out for 5 bucks at a time. Only takes 3 minutes to get them all. And the game is $20 new, or $15 used from gamestop. Sounds like a good deal to me. 200 points/$1. Hey man, I'd take it.
